Aurélien Lemaire, the vines of Boursault
Aurélien Lemaire makes champagne in Boursault in the Vallée de la Marne. He took over family vines and released his first wines under his own name in 2019.
Developing the family estate
He began farming the plots organically and introduced biodynamic practices. Soil work and vegetation support this change.
Several Champagne varieties
Chardonnay, pinot noir and meunier grow alongside petit meslier and pinot gris, among others. This diversity allows different blends.
Native yeasts and old barrels
The base wines ferment with naturally present yeasts. Aurélien favours old barrels and also experiments with qvevri-style clay vessels. Each wine has its own approach.
Different choices for each wine
Les Terres Jaunes focuses on chardonnay. La Guinguette combines several estate varieties, including less common grapes. Brut nature indicates no dosage after disgorgement, rather than an absence of sulphites.
