La Cidrerie du Vulcain, from Swiss orchards to Normandy
Jacques Perritaz founded La Cidrerie du Vulcain in Switzerland in 2006. Apples, pears and quinces from old orchards became the ingredients of his ciders and perries.
Rediscovering old varieties
The work began with tall orchard trees and sometimes overlooked fruit. Jacques seeks varieties that bring different characters to the blends.
Two places in one story
The activity developed around Fribourg, then in Normandy from 2022. The Treyvaux cidery closed in 2024. Older and newer bottles can therefore come from different places.
Fruit and fermentation
Juices ferment with native yeasts. Filtration and any sulphur additions depend on the product. A blend of several fruits should not be assumed from the name alone.
Reading the bottle’s origin
Cidre de Fer, Brute de Rue, À Propos d’Ailes and Trois Pépins belong to this family. The year, fruit and origin identify each fruit wine, beyond the cidery’s current address.
