Mëralla, from orchards to Alsace grands crus
Mëralla is Michèle Ramponi’s project, developed with Christian Binner in Ammerschwihr. Orchard fruit, grapes and their different transformations all have a place.
Starting with old orchards
The project began in 2018 by using forgotten orchards. Fruit juices were followed by grape-seed oil and verjus.
Working with other growers
The wine activity uses purchased grapes, including fruit from biodynamic growers working Alsace grands crus. Each lot’s origin remains the starting point.
Exploring different winemaking methods
Dry whites sit alongside skin-contact wines. RARE, meaning nothing added and nothing removed, describes the relevant products, rather than every product made under the name.
Numbers and fruit
Numbered wines, including grand cru skin-contact wines, sit alongside apple and pear juices. Each bottle’s information distinguishes wine, fermented drinks and alcohol-free juice.
